Abstract

Improving the quality of food and drinks was done by adding the food additives. One of them is artificial sweeteners such as saccharin sweeteners. Saccharin was used as a sugar subtitute because of the high level of sweeteness and the price is relatively cheap. Cotton candy were one of the potential food product were added saccharin in the making. This research purpose to determine the presence and levels of saccharin-sweetened snacks cotton candy circulating in the town square Boyolali using nine samples from three sources sellers as well as samples that deliberately added saccharin in the making by the researcher (standard addition). Saccharin qualitative analysis carried out by thin layer chromatography test and color test. Saccharin quantitative assay determined by UV spectrophotometry method with a maximum wavelength of 268nm. Based on the results of the research showed that the samples of trader A and trader B contains a sweetener saccharin does not meet the requirements under Regulation Head of the Food and Drug Administration RI No. 4 of 2014 on Limitation Maximum of Food Additives Sweeteners, the use of saccharin in snacks ready to eat ie 100 mg / kg with an average level that traders A 319.93 mg / kg, traders and 307.70 mg / kg and standard addition of 435.07 mg / kg while traders did not find any C content of saccharin in cotton candy.
