Abstract

Wheat grass is known to contain vitamins A, C, E, chlorophyll, bioflavonoids, linoleic acid, lysine, peroxidase, super oxide dismutase (SOD), essential fatty acids, linole-nic acid (ALA) which act as antioxidants. Antioxidants are a term for substances that function to protect the body from free radical attack. This study aims to determine the antioxidant activity of wheat grass ethanol extract. The ethanol extract of wheat grass was made using maceration method. The results of ethanol extract of wheat grass were then tested for phytochemical screening. This antioxidant test was carried out by the FRAP method using UV-VIS Spectrophotometry. Determination of antioxidant activity was carried out using IC50 values. Phytochemical screening test results from the study showed that wheatgrass was positively alkaloid, flavonoid, saponin, steroid, essential oil, phenol, and vitamin C. The results of antioxidant activity test of wheatgrass extract with IC50 value of 111.88 ppm, where these results showed that the extract wheat ethanol has moderate antioxidant activity and the coefficient of variation is obtained at 1.35%. Vitamin C antioxidant activity test results obtained by 113 ppm with a coefficient of variation of 1.10%. T-test results obtained a significant value of 0.385 which means antioxidant activity of vitamin C with antioxidant activity of ethanol extract samples of wheat grass obtained results there are no significant differences because the significant value is more than 0.05.
