Abstract

Food is anything that comes from biological sources and water, whether processed or not, which is intended as food or drink for human consumers. A foodborne disease that often occurs in society is diarrhea. Diarrhea is excessive loss of fluids and electrolytes that occurs due to the frequency of one or more bowel movements in the form of watery or watery stools. The most common cause of diarrhea is Escherichia coli. Escherichia coli is a gram-negative, short rod-shaped, facultative anerobic, non-spore, motile peritric flagellum. The purpose of this study was to identify Escherichia coli bacteria in hand swabs of food traders at SD Kanisius Semanggi II Surakarta. This research method is a descriptive observational study. The data collection technique uses primary data, which is done by directly observing and then taking the swab samples of the traders' hands for laboratory tests. The sampling technique used in this study was total sampling. The results of this study obtained 7 types of bacteria: Escherichia coli (14%), Klebsiella sp. 29%, Serratia sp. 29%, Citrobacter sp. 9%, Enterobacter aerogenes 5%, Proteus sp. 9%, and 5% Salmonella typhi. The conclusion in the research conducted by the author found that the Escherichia coli bacteria in the hand swab samples of food traders at SD Kanisius Semanggi II Surakarta were 3 samples, namely 14%.
