Abstract

Antioxidant is a compound that can reduce free radicals by donating one or more electrons to free radicals. Green okra ( Abelmoschus esculentus L (moench) and red okra (Abelmoschus esculentus L (moench) cultivar red burgund is a plant known to have antioxidant compounds like vitamin C, flavonoids and βcaroten, potentially as a source of antioxidant. Determination of antioxidant activity of the extract of green okra (Abelmoschus esculentus L (moench) and red okra (Abelmoschus esculentus L (moench) cultivar red burgund done using the FTC (ferric thocyanate), measurement of antioxidant activity using spectrophotometer uv-visible absorbance value generating free radicals, the value absorbance that has been obtained is used to calculate the % inhibition, then used to find the value IC50. In this methode, ferric thiocyanate whinch act as free radical mitigated by antioxidants. Radicals arrest test free ferric thiocyanate stated Inhibitor consentration (IC50 ). Ferric thiocyanate arrest free radicals cause a color change in the solution which can be measured using visible spectrophotometer at a wavelength of 499.5 nm and this activity of free radicals reduction by the sample can be determined. The result showed that green okra (Abelmoschus esculentus L (moench) has a value IC50 is 35,3686 ppm, red okra have IC50 is 42,5494 ppm an vitamin C is 40,7597 ppm . Value of KV green okra adalah 0,4908 %, red okra 0,1163 % and vitamin C 0,8161%. Green okra has a higher antioxidant activity than red okra shown from IC50 values and the test results are statistically significant 0.000 < 0.05 whinch indicates that the antioxidant activity of green okra and red okra significant difference.
