Abstract
One way to improve nutrition is to eat a variety of foods. Diverse foods are foods that contain elements of nutrients that the body needs. Triguna food is food that contains energy, building blocks and regulating substances. Meat is one of the sources of food with good nutritional completeness and acts as a building material. Processed meat snacks that can be found easily and favored by the public are meatballs. The purpose of this study was to determine the quality of meatballs sold in Kelapa Dua District, Tangerang Regency with the indicators of the Total Plate Number and the Most Probable Number of Escherichia coli according to SNI 3818:2014 concerning meatballs and BPOM Regulation Number HK.00.06.1.52.40011-2009 about the maximum limits of microbial and chemical contamination in food. This study uses a descriptive observational quantitative design. After obtaining the sample, then the Total Plate Number test was carried out using the ISO 4833-1:2013 method, and also the Most Probable Number of Escherichia coli test was carried out using the 2009:02 AOAC method. After the research was conducted, the results and conclusions were obtained that 6 of the 12 samples had Escherichia coli APM values outside the limits, while all samples showed Total Plate Numbers that were outside the limits of SNI and BPOM regulations.
