Abstract

Background and purpose : Cane water drink is one of the drinks that are easily found on the side of the road. Sugarcane water is widely consumed by the community, whether men or women ranging from children, teenagers to adults. Most sellers of cane water drinks pay less attention to the hygiene and cleanliness of the tools used. This makes it polluted with sugarcane drinks sold on the side of the road. This study aims to find out the number of bacteria in cane water drinks and sugarcane water drinks have met the requirements in SNI 3719: 2014. Method : The type of research used in descriptive research. The sampling technique in this study used a total sampling technique. The subject of this research is sugar cane drink in Mojolaban District, Sukoharjo. The inspection method used is the total plate number of the pour method (pour plate) Conclusion : The results of the study from 6 samples of sugarcane water drinks showed that the number of germs in the sample obtained an average total plate number of 1.5 x 106. From the results obtained, the cane water drink tested did not meet the requirements of the total plate number in accordance with SNI 3719: 2014, where the total plate number allowed for cider is a maximum of 1 x 104 colonies / mL.
