Abstract
The presence of Escherichia coli (E.coli) indicates a sign of poor sanitation practices because Escherichia coli can be transferred from hand to mouth or by passive transfer through food, water, milk, and other products. E.coli bacteria found in food and beverages that enter the human body can cause symptoms such as cholera, dysentery, gastroenteritis, diarrhea and various digestive tract diseases. On the other hand, rujak is a food that has the potential and high risk of microbial contamination because it is served in a non-hot and watery state and in blending it is handled directly without using tongs or plastic gloves. This study aims to determine the presence or absence of E.coli bacteria on the palms of rujak traders. The type of research used in this scientific paper is descriptive research. This research was conducted at the Bacteriology Laboratory of the National Health Sciences College and the time of the research was on 29 March - 6 April 2021. The sample of this study was the palm swab of a salad trader in Taman Jaya Wijaya Mojosongo. The sampling technique is quota sampling. From the examination at the National STIKES Bacteriology Laboratory, of the 5 samples examined, no pathogenic bacteria (Proteus mirabilis and Klebsiella pneumoniae) and non-pathogenic bacteria (Serratia marcescens) were found. Based on the research that I have done, by identifying the E.coli bacteria using the Biochemical Test. It was concluded that no Escherichia coli bacteria were found.
